Ingredients:
Crust
- 200g chocolate cookies (like Oreos)
- 5 tbsp (70g) melted butter
Filling
- 250g dark chocolate (60–70%), chopped
- 2 cups heavy cream (cold)
- 1/4 cup sugar
- 1 tsp vanilla extract
- Pinch of salt
Optional Toppings
- Cocoa powder
- Chocolate shavings
- Whipped cream

- Springform pan - makes removing the mousse so much easier
- Mixing bowls
- Hand mixer or stand mixer for the whipped cream
Instructions:
1. Make the crust
Crush the cookies into fine crumbs and mix with melted butter. Press firmly into the bottom of an 8-inch springform pan (I use one like this—since it makes it easier to remove the mousse later). Chill for 20–30 minutes.
2. Melt the chocolate
Melt the chocolate gently and let it cool slightly (it should be warm, not hot).
3. Make the mousse
Whip the cream with sugar, vanilla, and salt until soft peaks form. Stir a small amount into the chocolate to lighten it, then gently fold in the rest.
4. Assemble
Pour the mousse over the crust and smooth the top. Refrigerate for 4–6 hours, or overnight.
5. Serve
Top with cocoa powder, chocolate shavings, or whipped cream before serving.
